Cookie troubleshooting guide
If your cookies aren’t turning out quite like you hoped, take a look at this troubleshooting
guide, make a few adjustments and give the recipe another go.
Tough cookies
Possible causes and solutions:
The dough was over-worked.
Too much flour was added.
Remember to work the dough as lightly as possible, until the ingredients are just
incorporated. Also, weigh your flour precisely.
Flat cookies
Possible causes and solutions:
The dough was overworked.
The oven was not hot enough.
Too much fat (butter) was included in the mixture.
The dough was not allowed to rest or chill.
Next time, add a little extra flour, or use a little less sugar and butter, which helps them to
rise. Substituting some of your baking soda for baking powder also helps the cookie dough
to rise.
