             Moroccan shoulder of lamb with chickpeas, orange and green
             olives


             Serves 4 | Preparation time: 30 minutes | Cooking time: 2 hours


             What you’ll need:



             Ingredients


             800g lamb shoulder, cubed

             Salt and freshly ground pepper
             Olive oil
             2 sticks of celery, roughly chopped
             2 leeks, roughly chopped
             1 onion, roughly chopped
             1 bulb of garlic, roughly chopped
             10g rosemary
             1 Tbsp (15ml) ground cumin

             2 tsp (10ml) ground coriander
             1 Tbsp (15ml) smoked paprika
             2 tins (400g each) peeled tomatoes
             200ml red wine
             1 tin (400g) chickpeas
             ¼ cup (60ml) green olives, pitted
             1 Tbsp (15ml) preserved lemon rind finely chopped (optional)
