Four easy steps to make your own hot smoker
1. Line a large, deep roasting pan with a piece of foil and place a few handfuls of wood
chips on top of it.
2. Place your roasting pan on a hot cooking plate.
3. Place a cooling rack over the roasting pan, making sure it doesn’t touch the wood chips
and put your meat on top of it.
4. Once you see small wisps of smoke rising from the wood chips, cover your meat with
foil. To lock in all the valuable smoke and let it work its magic on the meat, make sure that
your smoker is completely covered with foil.
