             Home cured bacon


             Makes: 1 1/2kg bacon | Preparation time: 30 minutes (plus 5 days of curing)


             What you’ll need:



             Ingredients


             1½ kg pork belly, bones removed
             1,25 kg coarse salt
             300g treacle sugar
             2 tsp (10ml) saltpetre
             4 bay leaves
             ¼ cup (60ml) juniper berries

             ¼ cup (60ml) black peppercorns


             Tools


                   Knife
                   Chopping board
                   Pestle and mortar
                   Container


             What to do:


               1.  Cut the pork belly into three equal pieces.
