             Herb crusted salt beef, root vegetables and mustard sauce

             What you’ll need:



             Ingredients



             For the brine

             3L water
             375g salt
             375g brown sugar

             30g saltpetre
             1 Tbsp (15ml) juniper berries
             3 sprigs thyme
             1 Tbsp (15ml) black peppercorns
             4 cloves


             For the salt beef and root vegetables

             1,2kg beef brisket

             3L brine
             3 carrots
             1 onion
