             Smoked beef bourguignon salad


             Serves 6 | Preparation time: 30 minutes (plus 4 hours of marinating) | Cooking time:
             30-40 minutes



             What you’ll need:



             Ingredients



             For the brine

             2.5L red wine
             1 cup (250ml) red wine vinegar
             1 cup (250g) coarse rock salt

             2 sprigs of thyme
             2 bay leaves
             10 black peppercorns
             10 cloves
             1 cup (250ml) brown sugar


             For the smoked beef bourguignon salad

             1 fillet of beef

             2.5L brine
             200g streaky bacon, diced
             100g button mushrooms
