10. Testing for doneness
A loaf is ready when it sounds hollow if you tap it.
The bread ratio
Simple breads usually work on the ratio of 5 parts flour: 3 parts liquid, so that means, for
example, 500g flour to 300ml liquid (usually water) a dash of olive oil, salt and then of
course your yeast (10g). From this simple ratio you can also make a basic white bread loaf,
or simple dinner rolls.
