5. Get creative
Get this yummy rice to stand up to the challenge of being a main meal by adding extra
vegetables – whatever is in the fridge. Spring onion and peas are great additions to egg-
fried rice. Toasted nuts also work really well in this oriental dish.
6. Spice it up
Consider adding Chinese five spice, nutmeg or cinnamon, a hint of chilli and perhaps a little
garlic to spice up the flavour of your rice. Make sure you add the garlic just before serving as
it may burn with the heat of the wok and as we all know, once garlic goes beyond lightly
toasted, it turns bitter.
7. Break your egg straight into the hot pan
Get in there with a spatula while the egg is still raw and start breaking it up into small pieces
so it combines with the rest of the rice.
