             Simple sponge cake with passion fruit curd filling


             Serves 8–10 | Preparation time: 15 minutes | Baking time: 20 minutes


             What you’ll need:



             Ingredients



             For the cake

             200g butter, softened

             200g castor sugar
             4 eggs, at room temperature
             200g self-raising flour
             1 tsp baking powder
             1 tsp vanilla extract
             1–2 Tbsp milk, to loosen if necessary


             For the filling and topping


             3/4 cup passion fruit curd–see recipe below
             Icing sugar for dusting
             Whipped cream for the centre, optional
