Ratatouille is the perfect side dish for entertaining. It can be made the day before your
             guests arrive and actually gets better with age. Much like a stew, the flavours mingle with

             time and the dish becomes even tastier.

             Add a good glug of olive oil right at the end
             This will give the ratatouille a splendid shine and your guests will be able to taste the lovely
             raw flavour of the oil, intermingled with the flavours of all the different vegetables. As

             Franck’s grandmother used to say, you’ll also be adding sunshine to the dish.
