             Ratatouille with Gruyère croutons


             Serves 8 to 10 | Preparation time: 30 minutes | Cooking time: 30 minutes


             What you’ll need:



             Ingredients



             For the ratatouille

             5 very ripe tomatoes, cut into large chunks

             Salt and freshly ground pepper
             Olive oil
             2 large aubergines, cut into large cubes
             2 medium red peppers, seeded and cubed
             1 medium yellow pepper, seeded and cubed
             1 medium green pepper, seeded and cubed
             2 onions, peeled and cubed
             5 courgettes, washed and cut into chunks

             10 garlic cloves, peeled and thinly sliced
             1 T (15ml) chopped garlic
             1 bunch of basil, roughly chopped
             200ml olive oil


             For the Gruyère croutons
