             Prawn pad thai


             Serves 4 | Preparation time: 20 minutes | Cooking time: 20 minutes


             What you’ll need:



             Ingredients


             250g rice sticks
             60ml sunflower oil
             50g mung bean sprouts
             1 Tbsp (15ml) crushed garlic
             1 tsp (5ml) chopped chili
             16 medium prawns, peeled and de-veined

             2 Tbsp (30ml) dried shrimps
             80ml tamarind pulp
             4 tsp (20ml) palm sugar or brown sugar
             4 tsp (20ml) fish sauce
             2 Tbsp (30ml) soya sauce
             4 Tbsp (60ml) coarsely chopped peanuts
             1 bunch of spring onions, cleaned and sliced

             2 Tbsp (30ml) coarsely chopped fresh coriander
             Handful of fresh basil, washed
             2 limes, cut into quarters
