Ingredient substitutions, shortcuts and time-saving tips


               1.  Save a bit of time and hassle by asking your fishmonger to remove the pin bones for
                   you.
               2.  If you can’t find fresh tarragon in the supermarket, use dried tarragon instead.
                   Tarragon vinegar will also work a treat.

               3.  Not keen on the mild liquorice flavour that fennel brings to the party? No problem.
                   You can substitute it for celery.
               4.  For both recipes in this lesson, you can sub in any sustainable oily fish for the
                   Yellowtail and Tuna.
