             What you’ll need:
             Ingredients
             For the Hollandaise sauce
             1 onion, finely chopped
             ½ cup (125ml) white wine
             ½ cup (125ml) water
             ½ cup (125ml) white wine vinegar
             250g unsalted butter
             3 egg yolks
             Salt and freshly ground black pepper
             For the poached eggs
             8 eggs
             2 Tbsp (30ml) white wine vinegar
             For serving
