• Never open wine in front of a
guest if you are not confi dent open a bottle
or if you are unsure. If you are between the

suitable time. The guest is not a

• For screw caps gently twist and
snap the neck foil to open. When
opening wine always dispose of
the cork or cap.
TASTING
• Always off er a taste of wine to the
person who ordered it. If the guest
is in conversation do not interrupt,
simply pour approximately 30ml
into the glass. Stand with the label
facing the guest and await their
nod of approval.
• Guests are invited to taste the
wine to ensure there is no cork
taint or oxidisation. The purpose
is not to taste the wine in order to
see if they like it, or if they have
made the right choice. If the guest
indicates there is something wrong
with the wine, immediately take
the bottle to your manager or
supervisor so they can resolve the
situation.
