Owner Erik Brown shares “Amuse was established
                August 15, 2000—we just celebrated our 20-year
anniversary! Our original vision was a French inspired
menu. We would start the meal with an Amuse Bouche.
Recently, with everything going on, we have simplified
and reduced our menu. No more Amuse bouche and a
little more of a Mediterranean menu. We make most
items from scratch such as pasta, sausage, ice cream etc.
Our chef, Charlie Hutchinson, has been with us for a
couple of years. He loves all sorts of butchery, making
pasta, and fermenting things. The pandemic has hit us
hard like most restaurants. We have limited capacity so
we are only open Thursday, Friday and Saturday. We have
a smaller more rustic menu that changes more often.”

As Erik mentions, 2020 has been a challenging year for
many eateries across the country. In the midst of the pan-
demic, the Rogue Valley also experienced great loss due LIGHTS!CAMERA!ASHLAND!
