TIPS
• For results you can see, try to eat two cu- cumbers daily.
• Instead of juicing a multitude of vegeta- bles and fruits at one time, try juicing cu- cumber on its own. Cucumber juice is very effective when not mixed with any other fruits and vegetables.
• If you’re trying to keep grains out of your diet, turn cucumbers into noodles with
a julienne peeler. Cucumber noodles are more hydrating and tastier than the more popular zucchini noodles. Try English cu- cumbers for best noodle results.
• When using conventional cucumbers, make sure to peel off the skin before eating to avoid consuming the toxic wax coating.
CUCUMBER THAI NOODLES
This clean, cool noodle bowl will leave you feeling light and refreshed. This mild dish can easily be made spicier by adding extra red pepper akes at the very end to nd your perfect avour.
Makes 2 servings
INGREDIENTS 4 cucumbers 2 large carrots 2 teaspoons sesame oil 2 teaspoons sesame seeds Lime juice (from about 2 limes) Red pepper akes (optional) 1⁄2 cup chopped cilantro (fresh coriander) 1⁄2 cup chopped basil 1⁄2 cup chopped cashew
DIRECTIONS Cut the cucumbers and car- rots into thin strips using a julienne peeler or knife. In a large bowl, toss the cucum- ber and carrot “noodles” with sesame oil, sesame seeds, lime juice, and red pepper akes, if using. Just prior to serving, top the mixture with chopped cilantro (fresh coriander), basil, and cashews. Serve and enjoy!
