CREAMY COCONUT



            VEGGIE SOUP





















































            INGREDIENTS                                         INSTRUCTIONS






            2 Tablespoons - Ambrosia® Extra Virgin Olive Oil    In a large pot, heat mixed vegetables in olive oil on medium-
            1 Bag - Frozen ‘Corn, Carrot, Pea & Green Bean Medley’  high heat.
            1 Can - Coco Lopez® Cream of Coconut
            32 Oz - Vegetable Broth                             Once veggies are heated, add cream of coconut and
            2 Cups - Ambrosia® Arborio Rice                     vegetable broth to the pot.
            ¼ Cup - Nutritional Yeast                           Once your liquid comes to a boil, add in fully cooked rice and
            Ambrosia® Sea Salt, Fine (to taste)                 nutritional yeast. Turn heat down to low and allow to simmer
            Ground black pepper to taste                        for approximately 5-7 minutes.

                                                                Add salt and pepper to taste.
