BASIC VANILLA



            ICE CREAM



















































            INGREDIENTS                               INSTRUCTIONS






            1 Quart                                   Combine the milk, heavy cream, half the sugar, and the vanilla bean paste
            Milk                                      in a heavy-bottomed pot. Bring the mixture to a boil.
            1 Quart
            Heavy Cream                               Combine the remaining sugar with the egg yolks, and temper this mixture
            1 Pound                                   with approximately one-third of the boiling milk mixture. Return the
            Sugar                                     tempered egg yolks to the boiling milk mixture and cook over low heat,
            16                                        stirring it constantly, until it is nappé.
            Egg Yolks                                 Strain the ice cream base and cool it over an ice bath.
            3 Tablespoons
            Ambrosia® Vanilla Bean Paste              Process the mixture in an ice cream freezer until it is frozen. Store the
                                                      finished ice cream in the freezer.
