Nepali Chiya Tea




            Nepali chai tea


            Serves 4-6


            Ingredients:
            1.5 litres of water
            3-4 heaped teaspoons of black tea
            12 cardamom pods
            1 tablespoon of clove sticks
            8 teaspoons of sugar (optional or to taste)

            Method:
            1. Pour water into a saucepan
            2. Add tea (more or less can be used depending how strong you like the
               tea)
            3. Lightly crush the cardamon pods and cloves with a mortar and pestle (or
               Nepali style with a rock and slab!) and add to the saucepan.
            4. Allow to boil for approximately 10 minutes.
            5. Ladle tea into individual mugs, pouring the tea over a small strainer to
               filter out the tea leaves and spices.

            Tip:  For milk masala tea, use half water and half milk in the saucepan, add
            the tea and spices and enjoy!
