Pakoda Achar
Spicy Tomato Sauce
Ingredients:
3 medium sized tomatoes
3 strands of coriander (leaves and stems)
2 cloves garlic
½ teaspoon salt
chilli powder (to taste)
a pinch of ground Szechuan pepper
Method:
1. Boil the tomatoes gently until the outer layer of the tomatoes
ruptures. Allow to cool slightly.
2. Add the coriander, garlic, chili powder, salt, chilli powder, Szechuan
pepper and the boiled tomatoes in a food processor and blend until
smooth.
3. Garnish with a few coriander leaves and serve warm with Pyaji Pakoda.
