The more conservative among the idli lovers prefer sambar with idlis. On the contrary, the more
daring ones wash idlis down with a shot of curd mixed with chilli powder.
One can go on describing the ways in which the fertile brains of idli lovers work to make it tastier. I
recall an instance when some press-person asked the late Prime Minister, Mrs. Indira Gandhi, what
her favourite South Indian dish was. She promptly replied, “Oh, I love idlis with jam”, thereby
curdling many a Southie stomach.
It will not be an exaggeration if one says that the first person, whoever thought of such
permutations and combinations had a fertile and ingenious imagination. Perhaps this is less popular
as an invention because it has become a household matter. Yet one cannot deny the importance of
such an invention, though it even caters to the lesser mortals like the gluttons.
