Herbed Pita Chips


              Vegan
                       Pita chips are so easy to make, and making them yourself helps you
                       know you’re eating clean. Whether served with one of the many
                       homemade dips in this book or served with store-bought hummus,
                       everyone will love these herbed chips.

                       Cooking Tip: Use a large knife and cutting board to cut the pitas
                       quickly into triangles. Separating the triangles before baking
                       makes the chips extra-crispy.

                       4 (100%) whole-grain pitas    ½ teaspoon salt
                       3 tablespoons coconut         ½ teaspoon freshly ground
                          oil, melted                   black pepper
                       1 tablespoon Italian seasoning

                       1.  Preheat the oven to 400°F.
                       2.  Cut the pitas into 6 triangles. Separate the triangles.
                       3.  Put the pita triangles on a rimmed baking sheet and brush them
                         with the coconut oil. Sprinkle the pita triangles evenly with the
                         Italian seasoning, salt, and pepper.
                       4.  Bake for 8 to 10 minutes or until the pita chips are brown
                         and crispy.
                       5.  Let the chips cool. Serve.

                       Serves 6. Prep time: 10 minutes. Cooking time: 10 minutes. Total time: 20 minutes.
