Turkey Wrap
This recipe uses mayonnaise stirred with a little basil and feta
cheese to create a delicious herb spread. Some specialty health
food stores may have a clean version of mayonnaise, but it can be
hard to find. It’s very easy to make homemade mayonnaise and it
can last for up to a week in the refrigerator.
Cooking Tip: This recipe calls for “lightly packed” spinach.
Instead of pressing the spinach in the measuring cup, let it layer
naturally. Otherwise, you may have too much and your wrap may
be too full to roll.
¼ cup Homemade Mayonnaise 3 cups lightly packed fresh
(page 288) baby spinach
2 tablespoons chopped 2 jarred roasted red peppers,
fresh basil thinly sliced
2 tablespoons crumbled 7 ounces sliced natural,
feta cheese deli-roasted turkey
4 frozen sprouted-grain (no nitrates)
tortillas, thawed
1. In a small bowl, stir together the mayonnaise, basil, and
feta cheese.
2. Spread the mayonnaise mixture evenly on one side of each
tortilla. Top evenly with spinach, peppers, and turkey. Roll up,
jelly-roll style, and secure with wooden toothpicks. Serve.
