Almond Butter–Apple


                             Sandwiches                                    Vegan



             These sandwiches are kid-friendly and can be enjoyed as a snack.
             Apples and almond butter are tasty companions for this adventure-
             some sandwich. Explore the many great apple choices at the store.
             If you like tart apples, Granny Smith are great. Golden Delicious
             apples are sweet and tender, and Fuji apples are sweet and crisp.

             Ingredient Variation: Nut butters are readily available at many
             grocery stores, and it’s fun to experiment with diferent types. Try
             cashew butter or our recipe for Creamy Natural Peanut Butter
             (page 306) in place of the almond butter. You may switch out sliced
             banana slices for the apple, too, if you’d like.

             8 tablespoons all-natural     1 apple, thinly sliced
                 almond butter             4 tablespoons honey
             8 slices frozen sprouted-grain   ¼ teaspoon ground cinnamon
                 bread, thawed and toasted

             1.  Spread 1 tablespoon of the almond butter onto one side of each
               slice of bread.
             2.  Arrange the apple slices over the almond butter in one layer
               on four slices of bread. Drizzle 1 tablespoon of honey over the
               apples and sprinkle with cinnamon.
             3.  Top with the remaining apple butter bread slices, and serve.

             Serves 4. Prep time: 10 minutes.
