Grilled Mini Veggie Pizzas


                                                                           Vegetarian
             Everyone loves pizza and this recipe can get the whole family
             involved. Make it a pizza night and let everyone top their own. Try
             other favorite toppings like mushrooms, uncured pepperoni, and
             fresh pineapple. This recipe is cooked on the grill so there’s no
             need to mess up the kitchen!
             Cooking Tip: Is the weather outside not ideal for grilling? Not to
             worry. This recipe can easily be made indoors. Either substitute a
             grill pan and cook the pizzas covered on the stove top, or bake the
             pizzas on a baking sheet at 425°F for 10 to 15 minutes.

             4 (100%) whole-grain tortillas  ½ cup halved, pitted
             1 cup Homemade Marinara           Kalamata olives
                 Sauce (page 294)          ½ cup crumbled feta cheese
             2 cups sliced zucchini and    ½ cup shredded white
                 yellow squash                 Cheddar cheese
             ½ cup sliced red onion

             1.  Preheat the grill to medium heat.
             2.  Spread each tortilla with  ⁄ 4 cup of marinara sauce; top evenly
                                    1
               with the zucchini, yellow squash, onion, olives, and cheeses.
             3.  Cover the grill with the grill lid and cook for 2 to 3 minutes or
               until the tortillas are crisp and the cheese is melted.
             4.  Slice and serve.

             Serves 4. Prep time: 15 minutes. Cooking time: 5 minutes. Total time: 20 minutes.
