Beet, Pear, and Mixed

                                     Greens Salad
          Gluten-Free


                       Lettuce, along with being an amazing source of vitamins, minerals,
                       and other nutrients, is high in protein; the beets help purify the
                       liver and blood; and the pears are full of fiber, vitamins C and E, and
                       potassium. All together they make this a delicious salad with many
                       health benefits. With goat cheese and walnuts, it also happens to be
                       very pretty!

                       1 pound beets (preferably the   ¹⁄  cup Honey-Balsamic
                                                      ³
                          pink-and-white-striped        Vinaigrette (page 301)
                          chioggia variety), peeled   4 ripe pears, halved and cored
                          and sliced paper thin      4 ounces goat cheese, crumbled
                       10 ounces mixed baby lettuces  ½ cup chopped walnuts,
                                                        toasted
                       1.  In a large bowl, combine the beets, lettuce, and vinaigrette, and
                         toss well to coat.
                       2. Divide the salad among four serving plates. Arrange two pear
                         halves on each plate. Top each with the goat cheese and walnuts,
                         and serve.

                       Serves 4. Prep time: 10 minutes.
