Spicy Chipotle Ketchup

Move over store-bought ketchup. This variety has no high-fructose
corn syrup and is just what your French fries have been craving.
The addition of the chipotle pepper lends spiciness and smokiness.
You can find canned chipotle peppers in adobo sauce in the inter-
national aisle of the grocery. Omit the chipotle pepper if you’d like
a more traditional-tasting ketchup.
Ingredient Tip: You can store the unused chipotle peppers in
adobo sauce in an airtight jar in the refrigerator for up to 2 weeks.
Stir chopped chipotle peppers into salsa, rice, or guacamole for a
smoky kick.
1 (12-ounce) can tomato paste 2 tablespoons apple
1 chipotle pepper in adobo cider vinegar
sauce, finely chopped 1 teaspoon garlic powder
¼ cup honey ¼ teaspoon salt
3 tablespoons water
Whisk together the tomato paste, chipotle pepper, honey, water,
vinegar, garlic powder, and salt. Mix well to combine. Store
the ketchup in an airtight container in the refrigerator for up
to 2 weeks.
Makes about 1 cup. Prep time: 5 minutes.
