           Pork Belly (Siew Yok)
Servings: 4 carnivores | Prep time: 15 min | Total time: 12 hrs
DIRECTIONS
Day 1:
1. Mix marinade ingredients in a square dish.
2. Dry and score pork belly.
3. Put pork in marinade. Liquid should go up the sides of the pork but should not touch the skin.
4. Marinate overnight.
Day 2:
1. Put pork on rack over foiled tray.
2. Generously sprinkle salt on pork skin.
3. Bake at 400° for 30 min.
4. Bake at 350° for 1.5 hrs.
5. Turn up to 450° for 25-45 min.
6. Rest then slice and serve – enjoy!
INGREDIENTS
3-4 lbs pork belly Salt
Marinade:
1⁄2 cup soy sauce
1⁄4 cup oyster sauce
1⁄4 cup Chinese cooking wine 2 cloves garlic, minced
1 tbs sugar
1⁄2 tsp pepper
1⁄2 tsp Chinese 5 spice
