one of my favourites.
with curry mayo
Serves 4 This salad is a great addition to summer picnics and barbecues,
and makes a lovely light lunch. Put yoghurt, mayo, curry
Curry mayo: powder, lime juice, sugar and water in a large bowl and whisk
½ cup natural Greek-style until smooth. Add remaining ingredients and toss gently to coat
yoghurt and combine.
½ cup good-quality
mayonnaise (I use Best Foods)
2 tsp curry powder
1 tsp lime juice
1 tsp caster sugar
2 tbsp water
3 cups cooked quinoa
3 cups cooked, shredded
chicken
⅔ cup golden raisins
1 cup chopped, lightly toasted
walnuts
1 large stick celery, finely
sliced
1½ cups finely chopped raw
broccoli
1 avocado, chopped
⅓ cup finely chopped parsley
