Serves 2 for lunch, 4 as a side Line an oven tray with baking paper and preheat oven to 180˚C
(350˚F). Put all the seeds on the tray, drizzle with 1 teaspoon of
½ cup pumpkin seeds tamari and the teaspoon of olive oil then mix together with your
½ cup sunflower seeds hands and spread out flat. Bake 7-8 minutes until golden. (Omit
2 tbsp sesame seeds this process if you want total rawness – just use the seeds as they
2 tsp tamari are.) Put remaining tamari, olive oil, cider vinegar, honey, salt
1 tsp extra virgin olive oil and pepper into a small jar and shake to combine. Toss all the

3 tbsp cider vinegar mixed seeds for garnish. Drizzle over the dressing, and serve
1 tsp runny honey garnished with reserved coriander and seeds.
