Wild Blueberry Pie

                        . If it’s mushy or jammy, I’m not happy. But give me a slice
                of sweet berry pie, warm enough to slowly melt a scoop of Häagen-
                Dazs and full of completely intact little blue orbs nestled in buttery

                crust, and I’m a blissful girl.

                 All-Butter or Part-
                 Butter/Part-Shortening Easy
                 Pie Dough (page 19; or ¼      1 batch
                 batch Quick Puff Pastry,
                 page 22)
                 blueberries                   3 pints                       1 kg

                 zest and juice of 1 lemon

                 sugar                         1 cup                         200 g
                 Clearjel (see Note)           ¼ cup                         40 g
                 vanilla extract               1 teaspoon                    5 ml

                 nutmeg                        ½ teaspoon                    1.5 g

                 salt                          pinch
                 Crust Dust (see Note, page    1 tablespoon                  10 g
                 24)
                 unsalted butter, cut into tiny  2 tablespoons               28 g
                 pieces

                 egg wash (1 egg whisked with 2 tablespoons/30 ml water)
                 sanding sugar or turbinado sugar for sprinkling

                . Divide the dough into halves and return one piece to the
                  refrigerator. Roll the remaining half into a circle approximately 11
                  inches (28 cm) in diameter, use it to line a 9-inch (23-cm) pie plate,
                  and chill it while you make the filling.
