Berry Hand Pies

“ ” . A hand pie
is a pie made to fit into your hand (or pocket) so you can transport its
goodness on your travels without getting the filling all over your
person. A turnover is just another name for a hand pie; a calzone is
a large version of a hand pie; a Cornish pasty is a savory hand pie.
Bottom line is you can transform most of your favorite pies into
portable pouches of goodness and hide them away in your purse or
pocket to wait patiently (and cleanly) until hunger strikes.
Hand Pie Dough (page 21) 1 batch
fresh strawberries ½ pint 170 g
granulated sugar ¼ cup 50 g
zest and juice of 1 lemon
fresh rosemary, finely
chopped 1 teaspoon 2 g
cornstarch 2 tablespoons 16 g
sea salt pinch
fresh raspberries, halved 1 cup 170 g
egg wash (1 egg whisked with 2 tablespoons/30 ml water)
sanding sugar or turbinado sugar, for sprinkling
confectioners’ sugar ½ cup 50 g
milk 2 tablespoons 30 ml

. Hull the strawberries. Cut them into small pieces, a bit larger than
corn kernels. Combine the strawberries, sugar, lemon zest, and
rosemary in a mixing bowl and stir until the strawberries are evenly
coated with sugar. Allow to macerate until the sugar melts and the
juices of the strawberries run freely.
