Blackberry Buckle Pie

is the difference? I’ll tell you this much: A buckle is fruit baked into a
single layer of cake, with a streusel-like topping. If you’re me, you put
it all in a pie shell. As for those others, well, let’s just say they are
tasty, no matter what their particular components.
FOR THE CRUST
Simple Tart Dough (page ½ batch

all-purpose flour 2 cups 250 g
baking powder 1 teaspoon 5 g
salt 1 teaspoon 6 g
unsalted butter ½ cup 115 g
brown sugar, firmly packed 1 cup 220 g

juice and zest of 1 lemon
vanilla bean paste 1 teaspoon 5 ml
blackberries 1 pint 340 g
FOR THE TOPPING
unsalted butter, melted 1 cup 225 g
granulated sugar ½ cup 100 g
brown sugar, firmly packed ½ cup 110 g
salt ½ teaspoon 3 g
all-purpose flour 2½ cups 310 g
