. The green tea adds an earthy counterpoint to the
tropical sweetness of the mango. And the colors! Any doubts you
have about the pairing will flee when you see the two married on
your plate.

Matcha option
cream cheese 2 (8-ounce) packages 2 (225-g) packages
soft chèvre (goat cheese) 1½ pounds 680 g
sugar 1½ cups 300 g
eggs 4
egg yolks 2
all-purpose flour 2 tablespoons 15 g
salt ½ teaspoon 3 g
zest and juice of 1 lemon
matcha (green tea powder) 4 tablespoons 12 g
mango puree ½ cup 120 ml
green food coloring scant drop
orange food coloring scant drop

. Preheat the oven to 325°F (165°C). Set aside 1 tablespoon (15 ml)
of dough (wrap it in plastic wrap and refrigerate). Pat the remainder
of the dough into an 8-inch (20-cm) cake ring set upon a sheet pan
lined with parchment paper or a springform pan that’s been liberally
coated with nonstick cooking spray. You can also use, as I have, a
yin/yang mold (available online at Amazon.com and cake-supply
shops). If you do, remove the S-shaped piece from the middle for
this stage and proceed as you would with a regular cake ring.
