                . Add the sugar and salt and continue to stir until the pudding has
                  thickened, 5 to 10 minutes. Stir in the chopped ginger.

                . Transfer the rice pudding into a large bowl and cover the top with
                  plastic wrap laid directly on the surface to prevent a skin from
                  forming. Set the pudding aside to cool to room temperature.
