NOTE
                 Before cutting the smaller rounds, you may need to gather up the
                 pieces of dough and roll them out again. If so, make sure to stack
                 the pieces one on top of the other to keep the layer structure,
                 instead of just mushing everything together. Wrap the stacked
                 scraps in plastic and refrigerate them for 20 minutes before rolling
                 them out again.
