                         WITH ESPRESSO CREAM FILLING

           times to get just the right filling,

           and we finally settled on adding          CAKE:

           coffee  powder—it provides the right
                                                    Softened butter for greasing the pan
           kick but allows the filling to stay       1 package (18.25 ounces) plain devil’s food

           firm. Kahlúa is a wonderful addition,        cake mix
                                                    1 ⁄2 cup water
           brushed onto the baked roulade
                                                    1 ⁄3 cup vegetable oil
           and whisked into the hot glaze.          4 large eggs
                                                    1 ⁄2 teaspoon ground cinnamon
                                                    2 to 3 tablespoons Kahlúa or other coffee
                        SERVES:  16

             PREPARATION  TIME:  20  MINUTES
                                                    2 tablespoons unsweetened
             BAKING  TIME:  15  TO  20  MINUTES
