consistency, but home cooks have been resistant. Every recipe
writer and cookbook author touts the kitchen scale, and I am yet
another voice in the crowd vigorously nodding my head.
I’m going to let you in on a little secret: It’s not only the consistent
results that drive me to use the scale. Quite simply, using a kitchen
scale means I wash fewer dishes. Weigh an ingredient right into the
mixing bowl, hit zero, or tare, which resets the scale to zero, and
weigh the next ingredient. Using a scale means cup measures
become obsolete, and that fewer spatulas, spoons, and mixing bowls
are used. Using a scale for the massively annoying task of
measuring peanut butter, honey, and molasses means that instead
of scraping these sticky substances first into and then out of a cup
measure and into a mixing bowl, I can go instead from the jar directly
into the bowl, weighing each sticky ingredient with ease.
