CHOCOLATE VOLCANOES
WITH WHITE CHOCOLATE LAVA GLAZE

During my years as a newspaper food writer, I received many “help” calls from
frustrated cooks whose layer cakes were rising to peaks and domes in the center.
For this fun recipe, I wanted to create that peak so these chocolate cupcakes
would rise up and look as if they were about to erupt, like a volcano. To create
the peak, the sudden rise, you need to add more leavening than usual, but just the
right amount or the cake (in this case, the cupcakes) will fall flat. I added 1
teaspoon baking soda to the batter and a little vinegar to make the soda more
active, and I baked these at a higher temperature than most of the cupcakes in
this book to force them quickly upwards. After you pour a delicious white
chocolate glaze over them and decorate them with colored sugar sprinkles, you
will have a science experiment and a moist, chocolatey, kid-friendly cupcake all
in one!
