BLUEBERRY BANANA MUFFINS


                                             WITH A PECAN CRUNCH

               I think that blueberries and bananas are one of those perfect flavor combinations
               —a match made in heaven, so to speak. Try them together in smoothies, in
               pancakes, and in these easy muffins with a crunchy pecan topping. I froze the
               leftover muffins and reheated them a week later for a hurried midweek breakfast.
               They were delicious.




                     MAKES 12 MUFFINS (2½ INCHES EACH)

                     PREPARATION TIME: 10 MINUTES
                     BAKING TIME: 20 TO 23 MINUTES





               Vegetable oil spray for misting the pan



               MUFFINS:
               1 small ripe banana

               1 container (6 ounces; ¾ cup) plain yogurt
               1 large egg ½ teaspoon pure vanilla extract

               1 package (18.9 ounces) blueberry muffin mix


               PECAN CRUNCH:


               ½ cup finely chopped pecans
               4 tablespoons packed light brown sugar
               3 tablespoons all-purpose flour

               1 tablespoon butter, at room temperature
