CINNAMON APPLESAUCE LUNCHBOX MUFFINS

What children don’t love a little something sweet packed in their lunchbox? For
mine what really works best is a muffin. Cupcakes can be messy banging around
in a child’s lunchbox, but muffins are sturdy enough to handle the rough ride.
They’re fun to eat and garner a lot of “oohs” and “aahs” when they emerge from
the plastic bag. And this muffin, made with applesauce and topped with oats,
should also meet the approval of moms everywhere.
MAKES 12 MUFFINS (2½ INCHES EACH)
PREPARATION TIME: 15 MINUTES
BAKING TIME: 18 TO 20 MINUTES
MUFFINS:
Vegetable oil spray for misting the pan
1 package (19.1 ounces) cinnamon swirl muffin mix
1 cup unsweetened applesauce 1 large egg
STREUSEL TOPPING:
Cinnamon sugar packet from the mix (see box, page 236)
⅓ cup old-fashioned oats
1 tablespoon all-purpose flour
2 tablespoons butter, at room temperature
1. Place a rack in the center of the oven and preheat the oven to 400°F. Mist the
bottom of 12 muffin cups with the vegetable oil spray. Set the pan aside.
