CARAMEL SUNDAE CUPCAKES

What a refreshing little frozen dessert this is on summer days. You pull the
vanilla-ice-cream-and-caramel-filled granola and graham cracker crusts from the
freezer and slice fresh ripe peaches or nectarines over them. They are also
delicious later in the fall, when plums are in season, or with sliced ripe bananas
year-round.
