COCONUT SNOWBALLS

Originally, I was going to call this recipe Coconut Icebox Cupcakes, and that
would have been an apt name for them—packed with coconut, they are best
stored in the refrigerator (or icebox). But after I saw how beautifully the batter
rose into big, rounded tops, and how after piling on whipped cream and shredded
coconut they resembled snowballs, I knew their name had to change. No
throwing, just joyous eating.
MAKES 18 TO 20 CUPCAKES (2½ INCHES EACH)
