Blender Hollandaise Sauce

1 stick butter
3 egg yolks
2 tsp lemon juice
1/4 tsp salt
pinch cayenne
Melt butter in sauce pan. Put egg yolks in blender with lemon juice, salt
& cayenne. Turn blender off and on. Turn blender on high & pour in hot
butter in a stream. Turn off blender.
Serve immediately, or pour in small bowl and keep warm in a shallow pan of
warm water until ready to use.
Makes about 1 cup.
