Zucchini Crust Pizza

Crust:
4 cups zucchini -- grated
2 eggs -- slightly beaten
3 tablespoons Bisquick® baking mix
1 teaspoon salt
1/2 cup mozzarella cheese -- grated
1/2 cup cheddar cheese -- grated
Topping:
1 medium onion -- chopped
8 ounces mushroom -- sliced
3/4 jar spaghetti sauce
2 sausage links -- crumbled
1 cup mozzarella cheese -- grated
1 cup cheddar cheese -- grated
Crust: Mix all ingredients together thoroughly and press into a greased
11 x 15 pan. Bake at 400 degrees for 15-20 minutes or until set.
Topping: Sauté onion and mushrooms until soft. Spread the spaghetti sauce
over the zucchini mixture, then spread the onion mixture over that. Then
spread the crumbled sausage (these should be cooked sausage, like
Emeril's). Top with cheeses and bake at 400 degrees for 15 minutes.
