                                                   Wagyu Beef Steak Tartare




                                                                         Ingredients



                                                               - 12 oz diced wagyu beef, 1/4”
                                                               - 1 shallot, finely diced
                                                               - 1/2 oz chopped salted capers

                  Getty                                        - 2 oz Worcestershire vinaigrette

                                                               - Sea salt to taste
                                                               - Focaccia croutons

                                                               - Grape Must

                                                           Toss all ingredients in a bowl, coat well
                                                               and season with sea salt. Toast
                                                               focaccia croutons with tartare.
                                                            Microplane parmesan cheese for the
                                                              topping. Drizzle with grape must.
