Root Veggie Latkes
Preparation
Heat oven to 425. In a bowl, combine, 1 medium

russet potato, 1 small sweet potato, and 1 small
- 1 medium russet potato carrot with 1 beaten egg and ½ tsp each salt and
- 1 small sweet potato pepper. Rub a large baking sheet with olive oil
- 1 small carrot and drop mixture by tablespoons onto sheet, 1
- 1 egg, beaten inch apart. Flatten to form even disks; brush
- 1 tsp salt with more oil. Bake, turning once, until browned
a
- tsp pepper and crisnd crisp, about 30 minutes. Serve immediately
or store at room temperature up to 3 hours.
Reheat in 375 oven. Makes 2 dozen. Top with
Pimento cheese, radishes, and arugula.
