Worcestershire Vinaigrette
- 15 oz Worcestershire Sauce
- 1 cup Dijon Mustard
- 8 oz Red Wine Vinegar
- 4 oz Lemon Juice
- Sea Salt for Taste Getty Image
- 1 tsp Tabasco Sauce
- 46 oz Canola Oil 805561902
Mix all ingredients (except oil) in a
metal bowl. Whisk in oil and
emulsify. Adjust seasoning with sea
salt.
Yuzu Vinaigrette
- 5 cups Champagne Vinegar
- 12.5 oz Yuzu Juice
- 8 each Shallots Microplaned

- 20 Sprigs Thyme, Picked

In a lan a large bowl add everything

except oil. Whisk together well.
Gradually whisk in oil to vinegar
mixture. Adjust salt to taste.
