Wagyu Yakiniku
Ingredients Preparation
Use a sharp knife to score both sides of Wagyu steak
- 1⁄2lb Wagyu beef U
tenderloin in diamond pattern; place in shallow glass dish or
- 3 tbsp soy sauce sealable plastic bag. Combine maple syrup, soy
- 3 tbsp sake or 3 sauce and vinegar; pour over Wagyu steak. Cover
tablespoons sherry wine and marinate in refrigerator for 12 to 24 hours. Grill
- 1 ½ tbsp sesame oil over medium-high heat or broil for 5 to 6 minutes on
- 1 ½ tbsp sugar each side for medium-rare. Let stand for 5 minutes.
Thinly hinly carve against the grain into about 30 slices

juice Melt butter with garlic over low heat; brush over
- 2 tbsp roasted and partially both sides of bread. Place on baking sheet and broil
ground sesame seeds on both sides until just golden. Keep warm. Combine
- 2 garlic cloves, minced mayonnaise with chutney. Drape Wagyu steak over
- 1⁄4 tsp dry mustard toasts. Top with chutney mayonnaise. Garnish with
chives. Makes 30 appetizers.
